300g      minced chicken

2 tbsp    sliced shallot

2 tbsp    finely chopped  spring onion

1           hand full mint leaves

3 tbsp    roasted rice powder

2 tbsp    ground chilli

3-4 tbsp lime juice

3-4 tbsp fish sauce

½          cup water

Fresh vegetables to serve (eg: chinese cabbage cups, sliced cucumber, lettuce, green beans or snake beans)



1. Cook the chicken with ½ cup water in a pan over moderate heat. Stir until done.

2. Transfer cooked chicken into medium mixing bowl. Add the remaining ingredients, and mix well. Adjust the flavour to achieve a salty, sour and hot result.

3. Serve with fresh vegetables and warm, freshly-steamed sticky rice (or if you prefer you can use Thai jasmine rice)
